Just as your gazpacho probably isn't going to have nearly as much tomato flavor in Winter as it would in the Summer, garlic is going to be much more flavorful (and less bitter) around harvest time (i.e. July and August).  There are also different varieties of garlic, and even other garlic-like edible bulbs within the lily family (i.e. elephant garlic (which isn't actually garlic)) besides onions, with which you may want to experiment.  Otherwise, I'd suggest you wait until the mid-to-late summer before doing any more pickling.  If you're really impatient, though, now's a really good time to start pickling some cabbage, beets and carrots!</description>
